Watermelon And Pomegranate Sorbet Peter Taylor

1 kg Watermelon
300 g Sugar
30 g Pomegranate Seeds
  1. Extract 500g of juice from the watermelon by cubing it, liquidising, and sieving.
  2. Place the 500g of watermelon juice and 300g of sugar in a saucepan and bring to a simmer.
  3. Cool to near freezing.
  4. Pour into icecream machine as per machine's instructions.
  5. When the sorbet is coming together, add the pomegranate seeds.
  6. Freeze for a couple of hours before serving.
  7. Notes
    1. Special equipment required: an ice-cream machine.
    2. I found that the sorbet remained quite soft.
