1 tsp Salt
1 cu Onion (Small Dice)
1/2 cu Carrot (Small Dice)
1/2 cu Celery (Small Dice)
1 Garlic (Minced)
3/4 tbs Fresh Oregano
2 tsp Fresh Thyme (Minced)
1/3 cu Fresh Basil (Chopped)
1 tsp Pepper
1 tbs Olive Oil
42 oz Tomato (Diced Fresh Or Canned)
  1. In a large pot or dutch oven heat 1 tbsp good olive oil over med low heat.
  2. Add the onion, carrot, and celery, sweat for 10-15 minutes over medium low heat
  3. Add the garlic and cook for 2-3 minutes or until fragrant. Stir occasionally.
  4. Add the tomatoes and all of the juice, the thyme, oregano, salt and pepper.
  5. Stir ingredients, bring to a boil, then reduce heat to a simmer. Let simmer for 1/12 hour, stirring occasionally
  6. Check the seasoning at 1 hour, add salt and pepper to taste, and stir in the fresh basil
  7. Turn the heat off, set sauce aside for a few minutes. Blend carefully and to desired consistency with blender or food processor.
