12 oz All Purpose Flour
8 oz Butter Cubes (Super Cold)
6 oz Water (Super Cold)
2 tsp Salt
2 tbs Sugar
5 Peaches (Not Too Ripe)
  1. Place the flour, 1 tbs sugar, and 1 tsp salt in the mixer. Mix until combined for a minute
  2. Add the super cold cubed butter chunks, and mix on medium speed for a couple of minutes, or until you see larger chunks breaking apart. Keep the chunks on the larger size for flaky crust
  3. Turn the mixer on low and add the super cold water in a steady stream until you see the dough come together. Stop the mixer, do not over mix here
  4. Place the dough on a lightly floured counter, and bring the dough together with your hands. Cover with plastic wrap and place in the fridge for 30 minutes
  5. Take the dough out, and place on the lightly flour counter again. Roll it out into a rectangle or circle about 1/2 in thick. Fold and place it in the fridge again for 30 minutes
  6. Slice peaches, and toss with a tbs of flour, 1 tbs sugar, and 1 tsp salt. Take the dough out, and roll it out. Place the dough on the baking sheet before you fill with the fruit
  7. Place the fruit in the center, leaving about 1-2 inches border all the way around. Dot with the butter, and fold in the sides. You can brush edges with egg wash. Bake for 15-20 minutes at 425 F
  8. Notes
    1. You can use a stand mixer with paddle, your hands and a bowl, or a food processor.
    2. You will be using your hands to bring the dough together all of the way. If the dough is not coming together, add a tbsp of water at a time until it does
    3. After rolling dough and before placing it in fridge, to fold take 1/3 of it and fold it in, then fold the other 1/3 in
    4. While managing dough, make sure it stays cold. If needed, place in freezer for a few minutes and try again
