The perfect Summer recipe inspired by Call Me Cupcake's No-bake Strawberry Cheesecake (

Fresh Blueberries for garnish
4 tbs Butter
7 oz Frozen Berries
1 Orange Small
3/4 cup Sugar
8 oz Mascarpone Cheese
24 Trader Joe’S Lattemiele Milk & Honey Cookies
11 oz Cream Cheese
1.5 cup Heavy Whipping Cream
  1. Grind the cookies until they are mostly reduced to very fine crumbs, with some bigger pieces in the mix
  2. Melt butter and combine with cookie crumbs. Use this mix to cover the bottom of the baking pan by pressing evenly with hands
  3. Put this cookie base in freezer while you prepare the filling
  4. Mix strawberries, sugar, orange juice and zest with blender
  5. In a separate, large bowl, combine mascarpone, cream cheese and heavy cream and whisk until blended and creamy. Incorporate the berry puree
  6. Remove cookie crust from freezer and pour in the berry and cheese blend. Cover cake with plastic wrap and return to freezer for at least 8 hours.
  7. Before serving, garnish with previously washed fresh blueberries
  8. Notes
    1. I used an immersion blender to grind the cookies for the base preparation
    2. Remove the cheesecake from freezer approximately 20 minutes before serving.
