1 cu Smashed And Strained Banana
1/2 cu Applesauce
2 cu Cake Flour
3 Eggs
2 tsp Baking Powder
2 tsp Vanilla
1/2 tsp Salt
3/4 cu Milk
  1. Preheat oven to 350 degrees F. Prep cupcake tin with liners
  2. Sift flour, baking powder, and salt together in one bowl
  3. In another bowl, mix together the apple sauce, banana, eggs, milk, and vanilla. Whisk just a little bit so that they are fluffy
  4. Slowly incorporate the flour mixture into the apple sauce mixture
  5. Spoon batter into cupcake liners (a hefty amount, but not too full; about 3/4 the liner works great)
  6. Bake for approximately 18 to 25 minutes.
  7. Let cool and top with frosting. Right before serving add a slice of banana to the top
  8. Notes
    1. The bake time varies with different ovens. If a toothpick is put in the center of the cake and comes out clean then the cupcake is done.
