Kale, Pistachio And Sunflower Seed Pesto CookqcookQ

This raw pesto is simple and healthy. We adapted Jerry's recipe from cookingstoned.tv by adding more Kale, less garlic and salt and threw in some sunflower seeds... Kid-approved!


  • Yield 1.5 cup
  • Servings 10
  • Portion 2.5 tbs
6 Kale Leaves
1/4 cu Pistachio
2 Garlic Cloves (Small)
1/4 cu Extra Virgin Olive Oil
1/2 tsp Sea Salt
1/4 cu Sunflower Seeds (Salted)
  1. Remove the outer shell of the pistachios
  2. Remove the inner rib of the kale leaves and chop Kale into smaller pieces
  3. Peel garlic cloves
  4. Add garlic, pistachios, sunflower seeds and some oil in blending cup and blend with hand blender
  5. Add in the salt, half the Kale leaves and the remaining olive oil and blend
  6. Add remaining Kale leaves and continue blending until pesto is creamy

    1. You can enjoy many ways! In a dip, over pizza, gnocchi, pasta and more!
