Salt a pinch
Icing Sugar to measure
125 g Blueberries
250 g Mascarpone Cheese
4 Eggs
150 g Sugar
250 Soft Wheat Flour
16 g Yeast
2 tsp Vanilla Extract
  1. Preheat the oven at 180°C. Grease a cake pan (24 cm diameter) with butter and sprinkle with flour
  2. Mix together the eggs with the sugar to get a spumy and consistent mixture
  3. Add a pinch of salt and the Mascarpone cheese and stir until you have a fluid cream
  4. Add the flour, the yeast and the vanilla extract and stir
  5. Pour 90 gr. of blueberries into the dough, mix well and transfer the mixture in the cake pan.
  6. Garnish the surface of the cake with the remaining blueberries
  7. Bake it for 40 minutes, then let it cool, turn it out and serve it with icing sugar of top
